About this Coffee:

Finca Buena Vista is a 6ha farm owned and operated by Luis Bernardo Paguaga and is situated in Dipilto Viejo, in the Nueva Segovia region of Nicaragua. The lush, forested mountains of Nueva Segovia make this a prime specialty coffee region, with some of the highest growing altitudes in Nicaragua. The terrain is as beautiful as it is challenging to traverse, characterised by rolling hills and dense forest, often engulfed by thick clouds.

This lot was produced using the natural process with an extended anaerobic fermentation. First, ripe cherries are sorted, washed and introduced into airtight 450L tanks to ferment for up to 72 hours in an anaerobic environment. To lower the temperature down to 15C, the tanks are placed inside water-filled fermenting pools to slow the fermentation and avoid spoilage.

After the fermentation period is finished, the cherries are taken out of the tanks and transported to the dry mill for the drying process which may take up to 30 days. Initially, the cherries are spread on a single layer for a three day period to allow them to shed off the excess water. Once the cherries begin to dry, they are placed on the covered drying beds for the remainder of the drying period. The cherries are moved by hand three times a day to allow them to dry evenly and prevent over-fermentation.

This Coffee is roasted for Filter and Espresso brewing methods.

We have invested heavily in recent years in one of the most technolgically advanced roasteries within our area. Using the very latest roasting equipment across three systems and software which gives us the ability to maximaise quality and consistencey at every roast.

Once carefully packaged, it is then shipped to customers in the UK and beyond. With a global understanding of coffee harvests occurring at different times throughout the year, Dan collaborates with a team of specialised importers to ensure fair pay for farmers. As a company, we also prioritise investing in community projects that benefit the communities we depend on for our coffee.
