About this coffee;

Finca Noruega is located in the Ahuachapán mountain range west of El Salvador and grows a wide range of coffee varieties. The farm is part of the Renacer Program (Reborn in Spanish), which is a technical coffee field school and educational program for producers in the area to learn about better farm management practices.

This lot was picked selectively before being taken to the wet mill and drying beds at Beneficio San Rafael located between the two hills of El Pilon and Cerro Aguila at 1450 masl. In the harvest, this football field becomes filled with drying beds for all the coffees that come from the farms in Los Angeles and Noruega.

Coffee cherries are passed through a pulper, which splits the skin and forces the bean out using centrifugal force. The coffee is then left to dry with its mucilage intact. Constant turning and raking are required to avoid any over-fermentation or rot as moisture is brought down to the optimal 10-12%. The beans, at this point, often look like candied nuts, hence the name honey process.

This coffee is roasted for filter and espresso brewing methods.

Dan Fox, our Head of Coffee, leads a team at our Witney Roastery to expertly taste, select, and roast our coffee. We have invested heavily in recent years in one of the most technolgically advanced roasteries within our area. Using the very latest roasting equipment across three systems and software which gives us the ability to maximaise quality and consistencey at every roast.

Once carefully packaged, it is then shipped to customers in the UK and beyond. With a global understanding of coffee harvests occurring at different times throughout the year, Dan collaborates with a team of specialised importers to ensure fair pay for farmers. As a company, we also prioritise investing in community projects that benefit the communities we depend on for our coffee.
