About this coffee;

This coffee comes from Aracely Martinez Gomez, a second-generation coffee producer from Tres Cruces in the Lempira department of Honduras. Aracely has been working in coffee since 2004, learning to farm from her father Felipe Martinez who entered into coffee production in the 1990’s.

The farm is a reasonable size with 7,200 coffee plants distributed over 1.39 hectares. She primarily grows productive and high-quality varieties like IH90 (40% of the farm), Catuai (30%) and Catimor (20%), and like most producers in the region has an area of the farm dedicated to organic production. She operates with two yearly fertilizations on the farm, one in May and one in October, to feed the recovery from fruiting and the growth for the next harvest which runs from January to March.

This farm is the family’s primary income, with four family members supported from the production of the Finca. Together, they handpick the coffee, lay it out on a black tarpaulin to be sorted and then pulps the cherries first thing in the morning before a four hour fermentation. From here the coffee is washed and transferred to raised beds and patios to be dried over around 15 days.

As well as producing her coffee Aracely is the Manager of Tierra Lenca women's group, from whom we have another incredible single origin offering on our shelves. Coffee production in Honduras has reached a very high level and we are only scratching the surface with these current microlots. We’re excited to see what is coming in the near future and honoured to be able to share these excellent coffees with you.

Brew Recipe

Espresso: 1:2 coffee to water, extracted in 28 – 32 seconds
Filter: 60-65g coffee per litre of water, brewed for 3-4 mins

Filter 7 days | Espresso 14 days from roast date
This coffee may be rested prior to dispatch

Roast Days

We roast and despatch Monday to Friday. All orders placed after 10am on Friday will be roasted and despatched the following Monday.
