About this coffee;

Looking for the newest green processing methods &/or extended fermentation process and aligned with the seasonality of the coffee harvests, we discovered this unique gem grade 1 single-farmer micro-lot produced by Udesa Birie, a smallholder farmer from Chekelektu in Kochere, near Yirgacheffe. Udesa's farm sits at 1,896masl, and she cultivates the sub-varieties of Kurume, Dega and Welisho, all of which are classified as traditional Ethiopian heirloom varieties.

This lot was naturally processed with an extended 18-day anaerobic cherry fermentation prior to drying, developing the wild fruity flavours as Banana, Caramelized Pineapple and Black Cherry.

This coffee has been sourced and roasted for filter.


Brew Recipe

Espresso: 1:2 coffee to water, extracted in 28 – 32 seconds
Filter: 60-65g coffee per litre of water, brewed for 3-4 mins

Filter 7 days | Espresso 14 days from roast date
This coffee may be rested prior to dispatch

Roast Days

We roast and despatch Monday to Friday. All orders placed after 10 am on Friday will be roasted and despatched the following Monday.
