About this coffee;
Each of the members of this coop follow a strict processing procedure. Cherries are picked using a clearly outlined colour identifying criteria to ensure they are picked at peak ripeness. Then they go through 30 hours of dry anaerobic fermentation before being placed on raised beds to dry until an 11% moisture content is reached.
Each of the crops that go into this lot are cupped and scored individually to ensure only the best beans are selected. The result of this careful process is a coffee with notes of caramel and molasses and a pleasant, balanced acidity of oranges.

Brew Recipe
Espresso: 1:2 coffee to water, extracted in 28 – 32 seconds
Filter: 60-65g coffee per litre of water, brewed for 3-4 mins

This coffee may be rested prior to dispatch
Roast Days
We roast and despatch Monday to Friday. All orders placed after 10am on Friday will be roasted and despatched the following Monday.
