About this coffee; When the harvested coffee cherries arrive at the Gaterama wet mill to be processed they are taken through a meticulous fermentation process. 10 hours dry fermentation is followed by 12 hours fermenting in water tanks. From here the beans are washed of most of the sticky mucilage layer before the final soaking for another 10 hours in the tanks. This carefully monitored process helps to break down the sugars in the coffee beans to make a deliciously sweet cup once roasted.
The Mbirizi variety of coffee bean is unique to Burundi and Rwanda and is likely to have developed to suit the terroir in these areas. In this washed coffee from Burundi you can expect clean, vibrant flavours along with rich body and the brightness that is typical of such African coffees.
