Nicaragua Hacienda Sajonia Reserva
This coffee is marvelously interesting. It has citrus, caramel and marzipan notes on the nose. It has an almost leafy and sweet flavour on impact followed lime acidity and a bready and chocolate biscuit finish.
This is another hugely versatile coffee. Well made, that lime flavour can come through but if you use a more traditional recipe you can expect biscuit and dark chocolate. Try 18g-40g-30s. If you are keen to taste all the lime flavour try 18g-40g-20s. The amount of water should dull down high acid, leaving you with all the fruitiness.
