About this coffee;

As light roast filter, we are delighted to showcase an amazing coffee from one of our long-term farmers from Colombia Luis Anibal Calderon specifically 100% Gesha Double Anaerobic.

This lot was exposed to a dry anaerobic fermentation of 32 hours inside grain pro bags before pulped, later pulped and left to ferment inside grainpro bags for 48 additional hours. Afterwards gently washed and placed on raised beds below 35 C until ideal moisture content was achieved.

During our practise for the competition, we realise that it was better to brew this coffee for filter therefore roasted light to enhance the floral aromas as Chamomile and coffee blossom characteristic of Gesha Variety and the sweetness as panela (typical Colombian sugar cane) from the well-executed washed process adding complexity from the double anaerobic fermentation process.

Brew Recipe

Espresso: 1:2 coffee to water, extracted in 28 – 32 seconds
Filter: 60-65g coffee per litre of water, brewed for 3-4 mins

Rest Time

Filter 7 days | Espresso 14 days from roast date
This coffee may be rested prior to dispatch

Roast Days

We roast and despatch Monday to Friday. All orders placed after 10am on Friday will be roasted and despatched the following Monday.
